Home made Chicken nuggets

All kids love nuggets. You can try this simple recipe to make your own

Chicken Fillets 
1/2 cup plain flour or corn flour
2 eggs
1 slice day old bread
1/2 cup cornflakes crumbed
Blend day old bread to crumbs add cornflake crumb set aside. 
Break eggs and stir till runny
Chopped chicken into nugget shapes

Add flour to nuggets then dip in egg wash then bread and corn flake crumb. 
Leave in fridge at least an hour .
Cook in butter or small amount of oil.

 We all love scalloped potatoes this is a little different instead of cauliflower and cheese this is potato cheese
1/4 cup butter
1/4 cup flour
3 cups milk
1 cup  grated cheese
1 tsp. salt
1/4 tsp pepper
4 lb potatoes, thinly sliced
1 1/2 cups soft breadcrumbs
1/4 cup butter melted
1/4 cup grated parmesan cheese
1 chicken stock cube

Make a white bechmal sauce 
Melt 1/4 butter in large saucepan over low heat
Add flour and cook, stirring constantly for 2 to 3 minutes or until flour is lightly browned
Add milk and bring to boil, stirring constantly this is important.
Reduce heat and simmer  until thickened.
Stir in cheese, salt and pepper and chicken stock cube .
Spread 1/4 cup cheese mixture in a greased 13 x 9 baking dish.
Layer half of potatoes over cheese.
Top with half of remaining cheese mixture.
Repeat with remaining potatoes and cheese.
Bake uncovered at 180 -200 Cfor  1 hour.
Stir together breadcrumbs, melted butter, and Parmsan cheese.
Spread over potatoes,
Return potatoes to oven and bake uncovered  until potatoes are tender.

Orange French Toast

French toast is a real treat for kids a perfect special breakfast or a nice sweet served with some whipped cream. You can use any bread.
2 lightly beaten eggs
2/3 cup milk
3 teaspoons grated orange rind
3teaspns butter
8thin slices of bread

In a shallow bowl whisk the eggs,milk and orange rind till just blended
Add 1 teaspoon butter to a fry pan, over medium heat
Dip the bread into the egg mixture,turning to coat both sides
Place in fry pan and cook till golden brown
Yum. You can make these without the orange and they can be served with maple syrup

Mini chicken and Vegetable Meatloaves

A great idea isto make small individual meatloaves that don't overwhelm a child, try these using this recipe.

2 Small carrots gjrated
1 onion(optional)chopped finely
1/2 a small red capsicum chopped fine.
1 teaspn mixed herbs (you may use fresh if you have them)
1 large egg lightly beaten
500gms Chicken mince
1cup breadcrumbs
1/3 cup tomato sauce
60gms grated cheese
1 chicken stock cube


Melt some butter in a fry pan and add grated carrot,onion,red capsicum and herbs
Cook till soft. Cool.
In a large bowl combine the egg,chicken mince,breadcrumbs,tomato sauce,cheese Add the cooled vegetables and mix well.
Add balls of mixture to greased small muffin tins
Bake uncovered for 25-30mins.
In a large bowl combine egg,chicken mince,breadcrumbs,tomato sauce and cheese.

Vegetable Stack

This is great for kids you can add anything in the stack

2 firm tomatoes
200 g cheese
Freshly ground black pepper
1 red and 1 green Capsicum sliced finely
1 tablespoon olive oil
Taco sauce
Pita bread


Preheat the oven to 200°C.
Put on a greased baking tray without letting the pieces touch one another.
Slice the capsicum into strips and fry till tender
Slice tomatoes into thin slices. If you like, remove the seeds.
Add cheese
Spread one side of the pita bread with taco sauce, add one layer of vegetables then cheese repeat the process. End with taco sauce and cheese
Season.
Bake for 15 mins

Carrot and Potato Rosti

Rosti is easy to prepare and kids find them easy to eat.
If your child is 9-12months microwave the veggies first.

1 medium potato grated
1 carrot grated
1/2 cup grated pumpkin
1 teaspoon flour
2 teaspoons finely chopped onion
1 tablespoon oil

Grate the potato and place in water.
Squeeze all water from potatoe and add to a bowl, add grated carrot,pumpkin and chopped onion, mix in flour.
Heat the oil in a frypan and drop spoonfulls of mixture in to shallow oil.
Cook 3-4 minutes each side till golden brown.

Bean Pita pizzas

These easy pita pizzas are tasty and quite  healthy, your kids will ask for more
Lebanese pita breads
Tomato paste
½ cup canned kidney beans, drained and rinsed
½ red capsicum,diced
Button mushrooms, thinly sliced
Pieces of fresh or tinned pineapple
1 tomato, thinly sliced
½ cup  cheese, grated
Preheat oven to 200°C.
Place bread onto oven trays and spread with tomato paste. Arrange all other ingredients over the bread. Top with cheese. Bake in preheated oven for 10 minutes or until golden.
Remove from oven
Cut into wedges and serve.

Crumbed fish bits

 Kids love fish fingers why not give them the real thing, Its a great dish for all the family, you could have a fish and chip night using homemade webges baked in the oven as well.

500g white fish fillets, cut into small pieces
1 cup plain flour
2 eggs, lightly beaten
1/4 cup milk
2 cups fresh whole meal breadcrumbs
Canola spray
Preheat oven to 180°C. Line a baking tray with baking paper and set aside.
Roll the fish pieces in the flour, dip them into eggwash of milk and egg and roll in the breadcrumbs.
Place on a baking tray and give each piece a light spray with the canola spray.
Bake for 15 to 20 minutes turn over during cooking  and serve with lemon wedges and tartare sauce.

Cheesy vege wraps

A great way to get your kids to eat veges, excellent for a quick lunch for all the family
1 tablespoon olive oil

2 zucchinis, diced small
cherry tomatoes
Grated cheese
Tortillas
Spinach leaves
Salt and pepper to taste

Heat olive oil in a sauté pan over medium high heat
Add zucchini and tomatoes to pan and cook until they are tender
Remove veggies from the pan and set aside
Lay the tortilla on a clean surface and sprinkle with cheese
Add the sautéed vegetables and fresh spinach leaves on top of the cheese
And roll up the tortilla
Spray the one side of your wrap lightly with cooking spray
Add your wrap in the pan with the sprayed side down and cook it over medium heat for about 2mins or until slightly brown
Spray the top of the wrap and flip it over, browning the other side.

Cupcakes with m&m,s

Its school holidays time and kids love cupcakes try these they will be a hit.

6 tablespoons cocoa
6 tablespoons melted and cooled butter
½ cup sweet, melted and cooled chocolate
½ cup brown sugar
2 large eggs
1 teaspoon vanilla essence
2/3 cup self raising flour
½ teaspoon salt
½ cup M&M lollies, more for topping


Preheat oven to 350 degrees Spray cup cake papers with cooking spray and set aside.
Whisk together the cocoa, melted butter, melted chocolate, and sugar. Whisk in eggs and vanilla. Set this chocolate mixture aside
Add flour to chocolate mixture and stir until just combined. Add in ½ cup of m&m,s and stir until just combined
Fill up cup cakes about ¾ of the way full. Top each with one of the remaining 24 m&m,s
Bake for 15  minutes or until just set and slightly firm to the touch
Cool on a wire rack. . Alternativly add frosting then add the remaining mm,s

Marshmallow Ricebubble Slice

Something so easy, great for that party 200 g of white marshmallows
80 g butter
4 cups rice bubbles

Place  rice bubbles  in a large bowl. Line  tray with ovenbake paper.
Melt marshmallows & butter  in microwave
 Pour the marshmallow and butter mix onto the rice bubbles.
Mix wellpour into a lined tray and press down. 
Will set fast...

Creamy Chicken and Asparagus Bake

Kids love Chicken and this dish is so easy and tasty for all the family its pretty old fashioned but still tastes great.
1 chopped onion
1 small red capicum diced
2 sticks celery
1 tin of cream of chicken soup
1 cup milk
1 tin asparagus drained
1 tin creamed corn
2 cups cooked Chicken
3 cups cooked pasta shells

Cook onion capsicum and celery in a bit of oil stirring till tender
Stir in soup , milk ,chicken,cooked pasta, asparagus and S/P
Combine cheese and breadcrumbs and sprincle over top

Beef Strips and Red Capsicum Noodles

This sweet noodle dish is great for kids a stir fry that is easy for mum to make.
1/4 cup flour
oil
1 clove garlic (optional)
1 red capsicum finely sliced
500 gms Beef sliced finely into strips
1 teaspoon tomato paste
Noodles

Toss beef in flour, Heat oil and cook beef, remove from pan
Add garlic and capsicum to pan on low heat and cook .
Add tomato paste and cook 2 minutes
Return beef to pan and mix through till warm
Serve on top of noodles.

Chicken Plum Skewers

This chicken dish is great for  children to eat, show them how to eat with a skewer so they don't poke them selves.

Chicken breasts cubed

Marinate chicken with.
1/4 cup plum sauce
1teaspn sweet chili sauce
1 teaspn oyster sauce
Marinade chicken cubes then place on skewers
Cook for 15 mins under grill or on BBQ

Asparagus and Mint Frittata

This ia a delicate frittata that kids find easy to eat.
6 eggs
35 gms grated cheese
1 teaspn mint
200gms tin or fresh asparagus spears
2 tablespns oil

Place the eggs in a bowl and add the cheese and mint, beat gently add chopped tinned asparagus mix together and add to a greased  shallow pie dish, bake for 15 -20 mins
(if using fresh, cook the asparagus first by placing in a fry pan and cover with water cook till tender)

Zuccini Slice

We all have versions of Zucchini slice this is my fave

4 Zucchini's grated
1 onion chopped
3 rashes bacon chopped
1 cup grated cheese
1 cup SR flour
1/4 cup oil
5 eggs
s/p
1 chicken stock cube (optional)
Mix all ingredient together place in well greased container.
Cook for 30-40 minutes in a moderate oven

Quick Apple Sponge

Its apple season so enjoy

2tablespn butter
4tablespn sugar
2tablespn boiling water
1 egg
6 tablespn SR flour
4 cooking apples
Peel and core the apples then slice and microwave till cooked, place in a greased oven dish.
Beat the butter and sugar till pale then add the water and mix then add the egg and beat well
Finally add the flour and beat well.
Pour mixture over the apples and bake for 30 mins

Ham and potato Patties

A quick lunch that is so easy to make use leftover mashed potato so plan ahead

2 cups mashed potatoes
2 cups finely diced ham
1/2 cup grated cheddar
1/4 cup spring onions
s/p
Mix everything together and make into patties.
Heat 1 teaspn oil in a pan
Cook patties, until golden brown

Chicken Pastry Topped Pie

We all love chicken and this tastes great one for the whole family that the kids will love.

1 tsp olive oil

6 chicken pieces cut into cubes
1 large onion,chopped
1 clove garlic
1 cup sliced mushrooms
2 cups sliced carrot
1 cup sliced celery
1/4 tsp sage
1/4 tsp thyme
1/4 tsp pepper
1 cup chicken stock
1 cup milk
1/3 cup corn flour

Pie Top
1 cup SRflour
1/2 teaspn salt
1/2 tsp sugar
2 Tbsp olive oil
1/3 cup milk

Cook the chicken in a pan then place the cooked chicken into a casserole dish.
Sauté the onion, garlic and mushrooms until the onion is soft
Add the carrot, celery, sage, thyme and pepper cook for 5 minutes then add all to casserole and stir pour in the chicken stock
Bake covered, for 20 minutes
Combine milk and flour and pour over the chicken and stir add more milk or stock if too thick

Pastry

In a bowl, combine the flour, salt and sugar.
Stir in the oil until mixed through then stir in milk with a fork
Mix into a dough and knead the dough on a floured surface.
Add the pastry to top of chicken pie and bake  until the crust is golden brown on top.

Cheesy Corn piklets

I have always enjoyed piklets and I sometimes added different veges to this mix
1 tin corn

2 eggs, lightly beaten
1 cup grated cheese
2 spring onions chopped
4 tablspns SR flour
s/p
2 tablspns oil
Mix together corn, eggs, grated cheese, onion, flour, salt and pepper.
Heat oil and add spoonfuls of the mixture
Cook, and drain on paper towels

Fruit Kabobs

This is a wonderful way to give fruit to your children they taste great and are good for partys,squeeze a bit of lemon juice over the bananas to stop them going brown
1 apple

1 banana,
Grapes
Pineapple pieces
1 cup nonfat yogurt
¼ cup shredded, coconut
Chop the fruit into bite size pieces
Spread coconut on a large plate.
Slide pieces of fruit onto the skewer
Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered.
Then roll it in the coconut.

Baked Pears and Yogurt

Pears are very sweet so this is wonderful for dessert
4 ripe pears

200g Greek-style yoghurt
50g butter or margarine
Peel the pears, cut in half and remove cores
Put the pears hollow side up in a baking dish sprinkle over with sugar and dot with butter or margarine
Put a spoonful of yoghurt on top of each pear half.
Bake for 10 minutes

Rice Broccoli Bake

This combination works well a great way to get kids to eat brocolli
1cup cooked rice
100g broccoli
1 small onion
1 tin chopped tomatoes
2 eggs
300ml milk
1 cup grated cheese

Peel and chop the onion and broccoli into small pieces
Pour the tinned tomatoes into a saucepan and add the onion
Cook for 10 minutes, while stirring, and then add the broccoli
Pour the rice and the broccoli and tomato mixture into an ovenproof dish.
Beat together the eggs, milk and half the grated cheese in a bowl to make a sauce.
Add the sauce to the other ingredients in the oven dish

Chicken and Pineapple

Something tasty and sweet make sure that you cook the chicken completly
1 kg skinless chicken pieces
1 can pineapple chunks, drained
1 teaspn dried rosemary
1/2 teaspn paprika
S/P
1/4 teaspn ground ginger

Place the chicken in a baking dish.
Pour the pineapple chunks over the chicken.
In a small bowl, combine the rosemary, paprika, salt, pepper and ginger.
Sprinkle this over the chicken.
Bake covered  until the chicken is completely cooked

Little Normies Fruit Balls

I first made these when I was a child I can remember the book was from the Australian dried fruit association circa 1965, I loved the book as it was a Christmas present
I cant remember the exact ingredients that were in that recipe but I have always made them this way.
You can change the dried fruit you use to what ever your child likes

1 cup currants
1 cup Raisins
1 cup sultanas
1 cup coconut
1 cup mixed nuts (optional)

Put the fruit and nuts (optional) in a processor and blend
Wet hands and roll into small balls coat with coconut
place in storage container and refrigerate

Carrot Custard

This can be made with other vegetables just cook and mash

1 cup mashed cooked carrot
1 cup milk
1 egg

Beat egg and milk together, heat slowly stirring all the time until it coats the spoon
Remove from heat straight away, cool
Mix together mashed carrot and custard warm in microwave if serving warm.

Rice and Pumpkin Pie

Pumpkin is a very versatile vegetable this one is so easy to make and the rice crust tastes great with the pumpkin flavour
You can add any filling you like to this rice crust


2 cups cooked rice (brown or white)
1 egg lightly beaten
¼ cup breadcrumbs
500gms pumpkin
2 eggs lightly beaten
½ cup milk
1 cup grated cheese

Filling
Cook pumpkin till soft drain and mash add eggs milk and cheese and mix well
Base
Combine rice, egg, breadcrumbs in a bowl
Press evenly onto a greased pie dish bake in oven around 15mins
Add pumpkin filling bake for further 20 mins

Mushroom Cups

2 cup Mushrooms
Pitta bread
1tablespn Flour
1cup milk
1Stock cube
1/2 cup Cheese

Cut tortillas into small circles; form into cups by placing into a greased muffin tin.
Bake in oven for 15-20 minutes.
Remove from oven and set aside to cool.

Add mushrooms to pan and stir fry gently
Add flour and stir thru, add milk and stir till thickened
Season with stock cubes and half the cheese
Fill each cup with mixture and finish of with grated cheese then bake till bubbly and golden.

Carrot and Raisin Salad

This sweet salad can be used as a dessert a healthy alternative
1 large carrot
½ Cup Raisins or sultanas
2 Tablespoons honey
Juice 2 Lemons
Grate carrot add raisins
Mix honey and lemon juice together and melt in microwave
Pour over carrot

Lentil and Tomato Soup

This soup is good and offers a good source of legumes in the diet fresh tomatoes are best.

4 large tomatoes
Boil a pot of water, add whole tomatoes and let boil till skin splits a bit, remove straight away and peel skin off.
Chop in half and remove pips, chop into small pieces. Set aside.

1 tablespoon oil
1 medium onion finely chopped
4 cloves garlic, crushed
1 cup lentils
1 teaspoon vegeta or stock cube (unless you are using fresh stock)
½ cup tomato paste
1 stick celery, chopped finely
7 cups water (or prepared stock)

Heat oil in a pan add onion, garlic cook for 2 minute add lentils cook for 1 minute.
Stir in prepared tomato, celery add water (or stock), tomato paste and crumbed stock cube
(if not using fresh stock).
Simmer covered for around 30 minutes till lentils are tender

Upside Down Shepards Pie

By making simple foods, look great you can tempt even the fussiest of eaters.
This is a great winter food, if you add some powdered roast meat gravy mix you get a magic flavour.

500 gms of mince
1 carrot grated
1 teaspoon flour (If you are not using gravy mix)
1 teaspoon of roast meat gravy mix (optional)
2 tablespoons water
s/p
900gms potatoes, peeled
1 tablespoon milk
1 teaspoon butter
1 egg yolk


Cook the potatoes, mash with milk and butter add egg yolk, On a greased oven tray add tablespoons of the potato mix, make a well in the centre of each spoon full building the potato up the sides like a nest, brush with butter. Place in a hot oven at 200 degrees C until lightly browned.
Cook mince in frypan when brown add grated carrot and stir in roast meat gravy mix, or flour mix and cook one minute add water while stirring.
Cook for a further few minutes.
Fill up nest with meat filling

Sweet Potato and Apple

This suits a small child that has been on solids for a month or so you can use formula instead of water for this dish.

1 sweet potato peeled and diced
1 apple peeled cored and diced
150ml water

Place apple and potatoe into a pot with 150ml water cook till tender. Puree

Coconut Balls

These are easy lollies to make adjust ingredients to suit the taste of the child

1pkt sweet biscuits
1 tin condensed milk
Grated Coconut
Cocoa 2 tablespoons
Nuts
Fruit
Blend biscuits till crumbs add ½ coconut crushed nuts and small pieces of dried fruit
Add condensed milk
Roll into balls and roll into coconut

Porcupines

This is so old fashioned but older children love them, they are a great dish for all the family

500gms mince
1 brown onion, finely chopped
1/2 cup raw long-grain white rice
1 lemon, rind finely grated
basil leaves, finely chopped
500gm can tomato soup
1 1/2 cups water
1 chicken stock cube
Method
Combine mince, onion, rice, lemon rind, basil, and salt and pepper in a large
bowl.
Roll tablespoonfuls of mixture into balls.
Combine soup, water in a baking dish add crushed stock cube.
Add meatballs
Bake in oven till cooked

Stuffed Savory Pancakes

Pancakes are great any time these will go down well with the older child

1 ½ oz butter
Mushrooms, sliced
Creamed corn
2 cups white sauce
Pancakes
salt and pepper

Melt the butter and cook the mushrooms until they are cooked but not too soft. Stir the sweet corn with the mushrooms. Add the mixture to the white sauce season and then place the filling into each pancake.
Dot each one with oil or butter, sprinkle with grated cheese and bake in the oven

Apple Custard

This recipe suits children at around 9-12 months you can add other fruit if you like pick your child's favorite

1 apple,peeled cored and chopped
1 egg
150ml milk
Pinch of Cinnamon

Place the apple in a saucepan with 1 tablespoon water cover and cook till soft.
Add the apple to a greased ramekin
Heat the milk in a pot till hot then add beaten egg.Pour over the apple.
Place the ramekin into a pan surrounded by water (a water bath) bake in the oven for 20 mins until custard is set
Allow to cool

Potato Pancakes

I still make these for myself as a snack. Kids love them you can add a bit of bacon for older children

3 large potatoes
1 egg
1 tablespoon flour

Peel and grate potato wash in water then squeeze out all the liquid.
Add the potato to a bowl and add the beaten egg and flour and mix together.
Shallow fry spoonfuls in a pan with a bit of oil or use a non stick pan
Cook till golden.

Egg Fingers

These are yummy and make a great lunch for small children they can be served hot or cold.

4 hard boiled eggs chopped finely
3/4 cup cooked rice
2 tablespoon grated cheese
1 egg separated
2 tablespoon fresh bread crumbs
oil
2 tablespoon dry bread crumbs

Combine hard boiled eggs,rice,fresh breadcrumbs,cheese and egg yolk and mix well.
Shape mixture into fingers roll in flour then egg beaten egg white and breadcrumbs.
Let rest 30 mins then shallow or deep fry till golden

Scalloped Potatoes

This is a good dish for fussy eaters you can add a bit of chopped bacon thru the layers of potato its an old standard that kids seem to enjoy.
I had this when I was a child.

4 potatoes washed peeled and sliced thinly
1 cup milk
1/2 cup cheese (optional)
1 teaspoon butter
Flour

Coat potatoes in flour mixture and arrange in layers in a casserole dish
Boil milk and pour over the potato, dot with butter and sprinkle with cheese(optional)
Cook uncovered for 30 mins till golden brown.

Lemon Delicious

This is an easy sweet to make and is so yummy especially if you have your own lemon tree, all the family will enjoy this.

2 tablespoons Butter
2 eggs
2 lemons
1/2 cup castor sugar
1/4 cup plain flour
1/2 cup milk

Seperate yolks and whites from eggs
Finelly grate rind of 1 lemon
Cream together butter,sugar when creamy eggyolks and rind
Add flour, milk and lemonjuice
Beat egg whites until stiff and fold into mixture spoon into greased pie dish and bake till light brown 20-30 mins
Serve with cream

Crustless Quiche

Couldnt get any easier than this.
This is a quick egg and vegetable dish perfect for kids.
I make a version now,for myself except I add more types of foods like bacon and olives, salami when I feel like something simple.

1/2 cup grated cheese
1/4 cup corn kernels
2 mushrooms
1 spring onion
1 zucchini
1 tomato
2 eggs
1/3 cup milk

Wipe Zuchini grate onto a papertowel and remove moisture
Core and chop the tomato, chop the mushrooms, spring onions.
Place Vegetables in a greased rammiken
Add grated cheese
Whisk eggs and mik and pour into rammikens.
Bake till golden and firm.

Chocolate Self Saucing Pudding

What can I say about the standard choccy pudding,its a treat.
1 cup self-raising flour
2 tablespoons cocoa powder
1/2 cup brown sugar
80g butter, melted, cooled
1/2 cup milk
1 egg, lightly beaten
cream
3/4 cup brown sugar
2 tablespoons cocoa powder, sifted
1 1/4 cups boiling water
Preheat oven to 180°C. Grease an 8-cup capacity ovenproof baking dish.
Sift flour and cocoa into a large bowl and stir in sugar
Combine butter milk and egg slowly add to flour mixture whisking until well combined and smooth
Spoon into greased baking dish smooth top

Make sauce
Sprinkle combined sugar and cocoa over pudding.
Slowly pour boiling water over the back of a large metal spoon to cover pudding. Place dish onto a baking tray. Bake for 35 to 40 minutes or until pudding bounces back when pressed gently in centre. Serve hot with cream

Chicken Wraps for the Older Child

Kids love Chicken wraps and this recipe is so easy the kids can make them.
They are easy to make and for older kids you can add quacamole and sour cream on top.
You can dull the strength of the seasoning by adding flour and seasoning together as a coating.

Chicken/fillets or chump sliced
Seasoning burrito seasoning
Capsicums cut in thin strips
Onion cut finely into rings
tortillas
Cheese
Salsa

Cut chicken into strips
Season with burrito mix
Cut capsicums and onions thinly into strips and fry in pan till cooked remove keep warm.
Gently fry chicken in a greased pan
Grate cheese
Add all ingredients into tortilla add salsa last
Roll add to Grill
Serve with side salad

Frittata

This frittata is so easy to make and goes down well with kids of all ages.
You can add other vegetables to this, grate some in between the potato layers.
I also like to add 1/4 cup milk and 1/4 cup of cream when I make it for adults and I sometimes add salami and olives.


3 rashers of bacon
6 mushrooms
4 potatoes
6 eggs
1/2 cup milk
1/4 teaspoon salt
dash pepper
2 tablespoons butter
1/2 cup shredded Cheddar cheese

Cook Potatoes
Cook bacon
Drain on paper towel
In medium bowl, beat eggs with milk, salt, and pepper.
Place layers of potatoes,(grated vegetables) bacon & cheese finishing with cheese.
Pour over egg and milk mix cook in oven till firm, golden brown and tender

Chicken in Italian Sauce

When my son got to around 10 he loved chicken wings cooked this way I made my own sauce back then and I had to add heaps of mushrooms, I often served it with rice
For smaller children use chicken with no bones and don't bother with the garlic.
I figure around 4 was when my son started on this dish.
Expect the meal to be messy though.



¼ Cup oil
S/P
6 chicken pieces
1 clove garlic (only if your child likes garlic)
1 onion
1 small or capsicum
2 cups sliced mushrooms
1 bottle of Italian sauce
Chicken stock cube
Small amount of flour

Dust chicken in some flour
Heat oil in a pan and brown chicken on both sides remove from pan place onion garlic, capsicum in pan and fry gently add mushrooms last and fry till lightly golden brown
Add cooked vegetables and chicken to a casserole dish and top with a the Italian sauce
Bake for 1 hr
You can serve it with rice

Party Sausage Rolls with Apple

No matter how we try to feed our kids in a healthy manner, some foods kids just love so why not make the foods a bit healthier by adding fresh ingredients.
Sausage rolls are one of these foods so if you are going to make them, add some fruit to them to sweeten them up and make them tasty.
I have used apple and dried apricot.
You can use a good lean mince mixed with a bit of sausage mince that is the binder .
And always place the sausage rolls when cooked on paper towels to get rid of any excess fat.

I kg Sausage mince /or half of prime mince half sausage mince.
3 med Apples grated
1 Onion
sprinkle of pepper
Puff pastry sheets
1 Carrot grated
Small amount parsley (optional)

Grate apple, carrot and chop onion very fine, mix together with mince
Add chopped parsley. and a shake of pepper mix all together
Place an amount along the edge of the pastry and roll up.
Cut into serving sizes, prick with fork and brush with milk or cream.
Bake till cooked and golden brown.

Lasagna

I think all kids as they get older love Lasagna this is the easiest way I have found to make it.
get the kids involved adding the layers.


500gms minced beef
1 small onion, chopped
1 bottle pasta sauce
2 level tsp sugar
1/2 level tsp dried oregano
1/2 level tsp of basil
1 clove garlic (optional)
Pkt lasagna style pasta
salt
White sauce
3/4 cup flour
3 cups milk
1/2 cup of butter

I make my white sauce in the microwave I add 3/4 cup flour to 3 cups of milk and stir then add 1/2 cup butter and microwave stirring every minute till it cooks and thickens, without lumps.
In a large saucepan cook the minced beef and onion until the beef is browned, stirring when cooked.
Add the tomato sauce, sugar, salt, herbs and garlic (optional)
Bring to the boil stirring. Reduce the heat, cover bring to the boil stirring.
Turn down the heat and let simmer a few minutes stirring occasionally
Meanwhile if using fresh lasagna cook the lasagna in a large saucepan of boiling salted water and drain well
In a greased roasting tin or oven proof dish add a spoonful of white sauce and spread with the back of the spoon,this will stop the lasagna from sticking to the pan. then arrange a layer of lasagna sheets, carefully overlapping them to fit the dish neatly.
Cover with white sauce then some meat sauce finishing with grated cheese repeat ending in Lasagna shells then white sauce and finely cheese
Bake at 200 degrees C for 45 minutes

Tuna Noodle Casserole

Its school holidays time so you may need to cook an extra meal a day.
An easy lunch is this tuna casserole for mum and the kids, I add a tin of cream chicken soup to mine.

Penne macaroni or bow noodles
1 large tin tuna
1 tin creamed chicken soup
1/2 cup water
Cook up some pasta drain and add to a greased casserole dish
Add tin of cream of chicken soup and water and , mix,add tuna but dont smash it up too much mix and bake in oven 30-35 minutes till cooked, and golden on top.

Rasberry Macaroon Slices

When it comes to slices this is always a fave.
I have made these many times and they were a hit with my son as he was getting older and started school,I would put these in his lunch box.
Remember there is a lot of sugar and butter in this recipe, so don't give the child too much, make the size small.

Biscuit pastry
125gms butter
3 tablespoons caster sugar
1 egg
3/4 cup SR flour
1 cup plain flour
Cream together butter and sugar, add egg and beat well
Add flours and mix to a dough.
Rest it and refrigerate it for a few minutes .
Roll it out into a greased Swiss roll tin.

Raspberry macaroon
1/2 cup jam
3 egg whites
2/3 cup Castor sugar
1 cup coconut
Spread pastry with Jam.
Beat egg whites until stiff gradually beat in sugar.
Fold in coconut .
Spread mixture over the Jam and bake the lot for 40-45 minutes
When cool cut into child size pieces

Vegetable Frittata

Frittatas are an easy way to feed the kids vegetables,I know many versions of frittatas but when making them for kids I tone it down.
Im sure as I remember the different combinations I will add them to my blogs.
In the mean time add your child's favorite veggies.

1 tablespoon oil
vegetable stock cube
1 zucchini sliced
2 potatoes,cooked till tender
1 small slice,cooked pumpkin
1/2 cup creamed corn
1 teaspoon corn flour
1/2 cup cream (optional)
3 eggs
2 tablespoons cheese

Fry in oil the Zucchini till soft
Slice or chop up the potatoes and pumpkin add a layer to a greased baking dish.
Add half the corn and sliced zucchini then another layer of potato repeat finishing with potato. Top with cheese.
Mix eggs,cream (optional) stock cubes, corn flour and cheese together gently pour over frittata.
Bake at 180 degrees C until set.

Corn Rolls

These are a perfect lunch you can add some sliced ham for older kids.
You can experiment with fillings a white sauce with cheese,ham and asparagus is Yum.

1 slice of buttered bread
1 tablespoon creamed corn
1/2 spring onion (optional)
1 tablespoon cheese
pepper

Remove crust roll a rolling pin over the bread to flatten slightly.
Butter bread add creamed corn, cheese,and a shake of pepper
Roll up and place on oven tray, bake till golden

Pasties

This one is for all the family they can be vegetarian or mince just change the ingredients to suit the age of the child.


Sheets puff pastry (2 or 4 pasties per sheet)
2 grated potatoes
1 carrot
Peas
A sprig of parsley chopped finely (optional)
Small amount of Mince if available
Chicken stock cube (optional)

Grate potatoes and carrot mix with finely chopped parsley,stock cube, mince and peas
Salt/ Pepper.
Blend together
When mixed together place spoonfuls onto pastry sheets that have been cut down the centre into 2 triangles for adults or 4 for children fold and seal
Brush with milk
Bake for about 30 mins.

Savoury Vegetable pikelets

Pikelets are easy and tasty and small children can pick them up and eat them.
this recipe serves around 4.

2 eggs, separated
2 cups milk
1 1/2 cups flour
1/3 cup corn kernels
1 small carrot, grated
1 stick celery chopped finely
1 small onion, chopped finely
s/p
1 teaspn parsley chopped(optional)

Break eggs and separate whites and yolks, beat yolks with a whisk
Place the flour in a bowl and make a well in the centre,add combined whisked egg yolks, milk and s/p. Mix to a smooth batter
Fold in vegetables and parsley.
Beat the egg whites till stiff and fold into the batter .
Drop spoonfuls on to a heated lightly greased frypan and cook till golden

Egg Pizza

This one serves more than 1 child it can be for the whole family just add extras like olives and salami for adults.
Its so easy and quicker than ducking out for takeaway.

6 eggs
s/p
1 cup grated cheese
3 rashers diced bacon
1 tomato sliced
1 sprinkle of basil

Melt a teaspoon butter in a pan. Cook bacon take out of pan put aside.
Beat eggs with a whisk and add half the cheese and a pinch of basil, s/p.
Heat up pan add a touch more butter if you need.
Add egg mix and cook till the base is set but the top is still runny.
Add the cooked bacon to the top then the tomato and finely cheese.
Place it under the grill till top is cooked .

Eggy Potato

This recipe is an easy one to make and if the kids love eggs you have a winner.

1 Large potato
1 teaspoon butter
1 tablespoon milk or cream
1/2 rasher of bacon chopped
1/4 cup cheese
1 egg


Cook the potato in its jacket (I microwave or bake in oven)
When cooked scoop out the centre of the potato and mash.
Add chopped bacon rasher and half the cheese mix to the mash potato mix together.
Refill the potato with the mix, leaving room for an egg, break the egg into the potato being careful not to break yolk top with cheese bake till egg is cooked

Vegetable Layered Pasta

This is a meal that can encourage little ones to experiment with vegetables.
It also tastes great and can be adjusted to suit adults.

Macaroni or Bow noodles
2 broccoli flowerettes
1 teaspoon butter
1/4 cup corn
1/4 cup grated cheese
1/4 cup diced carrot
1 teaspoon flour
1/2 cup milk

Cook some macaroni or bow noodles
Cook the corn,broccoli and carrot till tender.
Melt butter in a small pot stir in the flour cook one minute stirring gradually add 1/2 cup milk stir till thickens, add more milk if needed.
Bring to the boil stirring until sauce is thick.
Add the macaroni stir and add some of the cheese and stir.
Layer the vegetables and macaroni mix with cheese in between finish with cheese, place in oven till cheese melts

Egg Custard

This egg custard, I fed to Jeremy when he was around 2 year old with no problems, he loved custard.
You cook this custard in a water bath which is when you place the ramiken dish, in a pan with water that reaches about half way up the ramiken, this steams the custard.

1 cup milk
1 egg
1 teaspoon honey
couple of drops of vanilla essence

Whisk all the ingredients together and place in a greased ramiken
Place in a a water bath in the oven cook till firm or till knife comes out clean.

Apple and Sweet Potato Pie

The sweetness of the apple and sweet potato makes this dish appealing to kids I started serving this one when my son was about 8 months old.
Mash it when its cooked for younger children

1 red apple
1 cup cooked sweet potato
1/4 cup milk
1/2 teaspoon flour

Peel and slice apple, add sliced apple and cooked Sweet potato in layers in a greased casserole dish, add flour to milk and mix,add milk mixture,cover and bake for 30mins in a moderate oven

Cheesy Spinach Potato Pie

Start the kids on veggies early, this dish I started serving at about
12 months of age if you are making it for younger children puree the spinach in a mouli, if you are making it for older children you can add some S/P

1/2 cup cooked spinach chopped finely and cooked
1 cup cooked mashed potato
1 tablespoon grated cheese

Combine vegetables and cheese and place in a buttered ovenproof dish
sprinkle with wheatgerm and bake 15 mins in moderate oven
